These can be seared first or simply cooked in the oven, and are also great sous-vide. Regardless of preparation method, we recommend using a thermometer to make sure your meat is cooked to the proper temperature.

Oven instructions: Heat a pan over medium-high heat (7/10) and add a tablespoon of high-heat oil. Sear on all sides for a total of 6 minutes.

Place in the oven and bake uncovered at 400˚F for 13-15 minutes, flipping the tenderloin over halfway through baking. Bake until center of pork registers at least 145˚F (and no more than 160° if you like it more well done), then transfer to a cutting board and let meat rest 5-10 min before slicing.

*The USDA recommends cooking pork tenderloin to 145˚F and letting it rest at least 3 minutes. When cooking to 145˚F, the meat will still be slightly pink in the middle.
