Oven
STEP 1:
Thaw pork and preheat oven to 425°F.
STEP 2:
Line a rimmed baking sheet with aluminum foil. Apply high-heat cooking spray or oil liberally to the cooking surface and pork.
STEP 3:
Bake until a thermometer placed in the center of the pork reaches 140°F (about 16-20 minutes).
Alt Recipe: Sear then Oven
If you prefer to sear these in a pan before putting in the oven, follow these instructions:
STEP 1:
Thaw pork and preheat oven to 375°F.
STEP 2:
Preheat an oven safe pan (ideally non-stick) over 7/10 heat. Add 2 tablespoons of high-heat cooking oil to the pan.
STEP 3:
Sear the pork for 3 minutes on one side. Then, flip and transfer immediately to the oven, cooking until desired internal temperature is reached (about 12 minutes for medium-well). Transfer to a cutting board or plate to avoid overcooking and rest for 3-5 minutes before serving.
