
Ingredients:
1 Cup of Short Grain Brown Rice
1 Cup of Butternut Squash, cut in small cubes
1 T of unsalted butter
1 Cup Shredded Cheese (we use Cheddar)
Salt and Black Pepper to Taste
Rice Cooker
STEP 1:
Peel and cut butternut squash into a small dice (a cube about the width of a grain of rice).
STEP 2:
Add rice, 1 3/4 cups of water, butter, and the squash to a rice cooker and set to cook. Season to taste with salt and pepper.
STEP 3:
When the rice cooker switches to warm mode, add the cheese and stir. Taste for seasoning and add additional salt and pepper if desired.
Stovetop
STEP 1:
Peel and cut butternut squash into a small dice (a cube about the width of a grain of rice).
STEP 2:
Combine rice, squash and butter to the pot and cook according to directions on rice package. Season to taste with salt and pepper.
STEP 3:
Remove from heat, add the cheese, and stir. Taste for seasoning and add additional salt and pepper if desired.
