Caribbean Rub Whole Chicken

Oven:

STEP 1:

Thaw chicken by placing in a bowl in your fridge for 24-48 hours or by placing chicken package in a 1 gallon ziploc bag and defrosting in a bowl using the water method. Note that due to the size of the chicken, a small hole in the packaging is possible during thawing but won't affect the quality of the product. Preheat oven to 400°F.

STEP 2:

Line a rimmed baking sheet with aluminum foil and set a heat-proof wire rack inside if you have one. Apply high-heat cooking spray or oil liberally to the cooking surface.

STEP 3:

Arrange chicken on rack (or directly on baking sheet if you don't have one), leaving at least 1-inch of space between each piece. Apply high-heat cooking spray or oil on the chicken.

STEP 4:

Bake for 30 minutes at 400°F. Then, turn up the heat on your oven to 450-500°F for another 10-15 minutes (10 minutes for extra juicy, 15 min for extra crispy and well done), flipping the pieces halfway through if you want an even crisp.
